EASY BEAN AND CHEESE ENCHILADAS
12 small corn or flour tortillas I prefer corn tortillas)
2 cans fat free refried beans
2 cups shredded cheese (I prefer cheddar or Mexican blend)
1 can enchilada sauce (I prefer Old El Paso)
Preheat oven to 350 degrees. Spray 9x13 baking dish with cooking spray. Pour a small amount of enchilada sauce at the bottom of pan and distribute it. Warm 6 tortillas in the microwave for 1 minute. Take one can of beans and divide among the 6 tortillas. Top the beans with cheese.
Roll each tortilla an place seam side down in baking dish. Repeat with the remaining tortillas. Cover tortillas with enchilada sauce and sprinkle with remaining cheese.
Bake for 30-35 minutes, or until cheese is melted and bubbly.
Serve with a side salad and enjoy!
